Divide the ground bison meat into four equal portions and shape them into burger patties. Season both sides with salt and black pepper.
Heat olive oil in a skillet over medium-high heat. Cook the patties for 3-4 minutes on each side, or until they reach your preferred level of doneness.
Place a slice of cheddar cheese on each patty during the last minute of cooking to allow it to melt.
Slice the burger buns and toast them lightly in a separate pan with a bit of butter.
Assemble the burgers: spread mayonnaise and ketchup on the bottom bun, add a lettuce leaf, a slice of tomato, a patty with melted cheese, and a few slices of red onion. Top with the other half of the bun.
Serve the bison burgers immediately with a side of fries or a fresh salad.
